Overdue dates based on Status

Hi all, we have a job register for our team which shows who is doing what job.

The column headings are job number, job type, due date, complexity (simple, medium and complex), status (complete, in progress, not commenced, on hold) just to name a few. I need help with two tasks.

Task 1 I'm doing a dashboard for the team showing some stats on our jobs.

a. Total outstanding jobs
b. No. of jobs completed in past 7 days
c. No of jobs due in 1 day, 2 days etc

Task 2: For the complexity column I have set up look up where if a job comes in, we have to determine whether it will be simple (0-3 days), medium (3-7 days) and complex (>7 days). I've got data validation in the column but I was wondering if there is a formula that I can add so that the complexity values get automatically populated based on the timeframe and due dates.

Any help with this would be greatly appreciated.
