Quantifying Data from Scaled Reporting

Hello...

I need some help to try and quantify scaled data results.
We have questions where the the user selects the most appropriate answer on a scale of 1 - 5.

Example question:

Client seeks interaction with peers?
Rate on scale of 1 - 5, with

1 being "Never",
2 being "Seldom",
3 being "Sometimes"
4 being "Often"
5 being "Always".

We will start with a baseline number, then remeasure down the road to see if their was any change, no change, improvement or negative improvement.

So, if Baseline is 1, client "Never" seeks interaction with peers", and at the end of the training, there was an improvement and the caregiver selected 3, "Sometimes".

So, on a scale of 1-5, baseline is 1, and 3 is the score at the end of the training.

How do I show code or calculate the change in a table in a way that is meaningful, shows improvement or no improvement, and quantify on a graph?

I need to be able to show "improvement", "No Change", and "Negative" outcomes to each question in a table and graph.

I have about 30 of these questions and need to find a clean way to measure and report progress.
