I have a spreadsheet where I track on a scale from one to five a vendor's job performance based on five criteria.

How do I average their overall rating, assuming one vendor can be used mulitple times because they may perform more than one job?

Ambidextrous Undo
Undo last command with Ctrl+Z or Alt+Backspace. If you use the Undo icon in the QAT, open the drop-down arrow to undo up to 100 steps.
Have you looked in to using a pivot table with the vendor in the row label, the rating in the values, and using the drop down arrow to switch the values from sum to average under value field setting.

Unfortunately, I have blank cells so a pivot table wouldn't work for me.

The blank cells should only cause you to have to define the pivot table range differently, and have a blank cell line in your results.
