for example different work sheets for differnt dates and then a drop down menu chooses the range in the look up function?

What did Pito Salas invent?
Pito Salas, working for Lotus, popularized what would become to be pivot tables. It was released as Lotus Improv in 1989.
Have a look at using the indirect function in the third vlookup argument. Note that indirect requires the workbook you are referring to to be open.

let say you have
=VLOOKUP(A6,Sheet2!$A$1:$B$10,2,0)

but you want to change the table you are looking up from.
if you use
=VLOOKUP(A6,INDIRECT(A1&"!$A$1:$B$10"),2,0)
and A1 contains the value "sheet2", it will look to sheet 2. Change the value in A1 to sheet3, it will look to sheet 3. If you use indirect to reference another workbook, the workbook must be open. You can use validation on A1 as you say to limit the choices to valid ones.

(should have second vlookup argument above)
