How do I get a number of flat spreadsheets which are maunally updated to feed automatically into a central master spreadsheet, inputing any new values entered into the next free row?

If by flatfile you mean some kind of a form that data is entered into and then saved, you could probably use the Template Wizard with Data Tracking to add entries to an existing database. See
