Excel formula at the moment

For my excel formula for (capital) profits I need the values in some of the cells. However I only want the values of these cells at the moment when some capital is sold. When later buying back, these values will influence the profit, so is it possible in excel to only use the values in the cells at moment 1 and not using them at moment 2?

What do {} around a formula in the formula bar mean?
{Formula} means the formula was entered using Ctrl+Shift+Enter signifying an old-style array formula.
What defines the "moment"? Perhaps you need a column to indicate which to include and which to exclude and when.
