For a class I let students drop thier lowest two quiz scores. I know how to do conditional formatting to see the higher values easily, but how do i make excel read these values to get the average quiz score?

What is the fastest way to copy a formula?
If A2:A50000 contain data. Enter a formula in B2. Select B2. Double-click the Fill Handle and Excel will shoot the formula down to B50000.

Like this? Formula copied down. It does assume there will be at least 3 scores, is that a problem? If so, what do you want to happen if there is only 1 or 2 scores?
