Boss wants a Graph for instructions to show progress

I'm stuck with a request from my boss that wants a line graph for some Documents used for training. Right now I have the documents sitting in Folders Named Approved, Draft for Review, and Ready for Review

I'm wondering how to effectively display the data that will show progress. Currently, I have the Data situated Like this

Any ideas on how I can arrange the data to show progress over months. I was thinking of having a Date due Column.

Any guidance or links to you tube videos would be helpful

Move date out one month or year
Use =EDATE(A2,1) for one month later. Use EDATE(A2,12) for one year later.
