Changing the default settings on excel for pivot tables

Is there a way to change the default setting for the value field settings for a pivot table so that when you add new items, they are calculated automatically as average instead of sum or count?

Hmmm, not that I've ever seen. But if you're running 2007 or 2010, there are a couple of options that easier than drilling down to the Field Settings.... You can just right-click one of the cells in the data area and change the Summarize By setting in the popup.

There's also a Summarize Values By button on the [PivotTable Toosl] Options tab in the ribbon.
