Is there any way, or code etc, that you can drag a formula downwards, and it increments the column letter rather than the row number?

Select a range of cells. The total appears in bottom right of Excel screen. Right-click total to add Max, Min, Count, Average.
Not directly, no. You would need to adjust the formula to use an INDEX or OFFSET function in conjunction with the ROW function. The exact detail would depend on your existing function.
