Keep column reference static.

I'm using this code on a cell in a separate tab:

='Sammich Ham'!$H$3

Each month I add a new column between G and H moving the previous months data from H to I making room for the new months data in column H. Adding this new column changes the formula from
='Sammich Ham'!$H$3 to ='Sammich Ham'!$I$3 How can I make it so it will always stay as H

You could always make it a string and use INDIRECT

Excel Formula:
=INDIRECT("'Sammich Ham'!$H$3")

or use the offset, if F is not moving then the every new H is 2 columns away from the fixed F
='Sammich Ham'!$H$3 to ='Sammich Ham'!$I$3
Excel Formula:
=offset(Sammich Ham!$F$3,,2,,)
