Manual sorting in pivot table

I have a large data set that I use for multiple reports. I have a pivot table that I am constantly changing filters for. I would like the table to sort in a specific way, for example
Revenue
Cost of Goods Sold
Operating Expenses

I can sort these manually, but every time I add data to the data set, the manual sorting is lost. I have unchecked the "Sort automatically every time the report is updated" box, and the sorting stays like I want it, until I have to add more data to the data set.

Is there any way around this or am I going to have to set up a bunch of custom lists?

And if I do set up custom lists, are they available only to me or to whoever uses this workbook? It's a workbook that several people use.

Thanks for your help. I'm getting really tired of sorting this thing!
