When creating a pivot table, would like to have only certain columns on the pivot table display a grand total. These are the headers, we do not want How to Contact, Document Type to display grand total as it is just repeating the same information as these are done with table with concatenatex to display number and abbreviation of document type in the table. Row Label displays owning leader name and person's name, sum of total number of documents past due is number and would like grand total to display and
Row Labels
How To Contact
Count of Document Types
DocumentType
Sum of Total # documents past due
Sum of Total $ Held

Create a Pivot Table on a Map
If your data has zip codes, postal codes, or city names, select the data and use Insert, 3D Map. (Found to right of chart icons).
Totals in a pivot are all or nothing, you can't have them on selective columns.

Hide the ones you don't want with formatting / conditional formatting?

Not something I've tried, could get messy when you refresh and new data is added to the pivot. Whatever you try will be more workaround than solution, meaning that it is highly likely that the problems it causes will outweigh the benefits of using it.

If you're using a CONCATENATEX measure, you could probably alter it to return blank when there is more than one value in the relevant row field.
