Set data type Other Columns

Is there any way to specify the type of unknown column without explicitly listing there names?

For example I know the table will have columns [Site] and [Dept] but because I've pivoted some data the number of other columns (all being date) in this example are unknown?

Maybe like:

ThisStep = Table.TransformColumnTypes(PreviousStep,{List.RemoveMatchingItems(Table.ColumnNames(PreviousStep), {"Site", "Dept"}), type date})
