I calculate MTR of service requests by subtracting the close date/time from the create date/time
But is there a way of also factoring out weekends and possibly national holidays in that equation?

When did Power Query debut in Excel?
Although it was an add-in in Excel 2010 & Excel 2013, Power Query became a part of Excel in 2016, in Data, Get & Transform Data.
In 2010 and above, you can use NETWROKDAYS.INTL function which can accept holidays and gives the flexibility to determine what your workdays and weekends are
