Each day I enter my weight in a cell running across the sheet Sunday - Monday 7 cells D3 - J3.

I want to have the 8th cell K3 tell me each day how much I have loss since Sunday D3?

Use =MROUND(A2,"0:30") to round to nearest half hour. Use =CEILING(A2,"0:30") to round to next half hour.
