Excel formulas for working with text only

Hi there,
I need some help to find some formulas if possible, i checked online but couldn't find formulas for text only.
So I have an excel database (12 sheets, Jan-Dec)
in every month I have 5 columns (postcodes from AB1-AB99), another column is condition (every cell has a drop down (cold, stoma, bla, X, XX(30 options of them), location (drop down (home, hospital, phone).
So what i need is to have some formulas to give me the information per months as:
in jan i have this amount of cold / stoma/ bla /X)
numbers of hw many locations per month as well (home/ hospital/phone)

just need to make a report of my activity and I'm assuming Excel can help with this without me doing on paper.
I tried COUNT or COUNTIF but got errors (maybe my syntax was wrong).
could you help me with some ideas?

Sounds like you are looking for ways to quickly summarize data. Take a look at using Pivot Tables.
If you do a Google search, you can find some tutorials on how to use them.
