excel worksheet protection

I created ca pricing worksheet with multiple tabs. It is saved on a server accessible to multiple sales team. It is protected to stop sales people to change formulas or pricing. They need to save the entry data (quote) they do but I don't want them to save the hole spreadsheet because I want to be able to change pricing and stop sales people to use older versions of the spreadsheet. Any Idea on how to do this? thank you
