Exclude blanks in COUNTIF referencing another cell

I have a formula that is counting everytime a referenced cell's text appears in another worksheet. It is working perfectly so far for what I need currently. But I want to continue the formula down the column in blank rows so that if I add another team member later, it will still work. When I do that, it counts all the blank cells. This is my current formula:

=(COUNTIF(Sunday!A:B,"*"&A3&"*"))

and here is a section of my table for reference:

I am down to the wire on my deadline for this and am running in circles
