No value to display on cell-Pivot Tables

I use Excel 2010 for data analysis, but sometimes the raw data contains no value...(for example extracting information from previously cataloged items and no info was reported for a field such as the year or the author or location). I want to use pivot tables for a research report but what can I do about those blank cells so they do not alter the results when counting, filtering, grouping and my charts?:confused: Thank you....

I would like the item that has no value on a category or series field to be excluded from my counting for that field but not from the totals when I do percentage. I hope this makes sense:(

I don't fully understand. Some sample data might be best - both inputs & results. Please describe both the current pivot tables results and the desired different results.
