counting trends over time - by hour, and by day

Please forgive my appalling lack of Excel vocabulary. I'm not even sure what what I'm trying to do is called. :)

I have a spreadsheet to track the time and frequency of occurrences, say phone calls. My data is like:

Weekday Date 9:00 hour 10:00 hour 11:00 hour
M 5/15 99 5 0

I'm looking for a dynamic (?) chart to track:
Weekday 9:00 hour
(all Mondays) frequency of occurrence per hour

The idea is to get a look at how busy various hours are. For instance, is the 3:00 hour always the busiest? Or just on a couple days of the week?

I want it to update as I enter the data for each week.

(Once I have this figured out, I'm gonna try it to tell me which days are overall the busiest and have that update as well.)
