Dropdown list to create new sheet...to create auto update flat table!

Explaining the story may help you guys understand my needs...

I am a gym coach. My athletes will come into the gym, perform their session and then head to my computer where they will enter their load from that day. I want it to be as simple as possible for them.

I want a drop down menu for the date - for each date, this will allow a new sheet to be filled in (but all the new sheets have to be in a certain format i.e. with space to record exercise, sets, reps, load etc).

For now...this is the only information I need....the next steps will require automatically collating information from each of these daily sheets into a flat table for some awesome pivot table analysis!
