multiple sheets count

dear excel gurus,

I am a low-middle level excel user, and i stumbled upon the following task that I seem cannot solve myself.

There is an excel downloaded from a server that always adds new items, so, however, it is alphabetical order, every new sheet the lines can be shifted. It is an inventory for the school cafeteria.
Say I have new sheets every week with new elements added each time. The goal is to compare sheet 2 to sheet 1 find the line where the content MILK is, ( but it could be in a different row if there are added elements. and after finding where the milk row is, I need to compare it to sheet 1, and display the difference either it is + or -. I have to repeat this task as I will end up with 18 different sheets downloaded different time and so it would be nice to see some macro or formula could do this.

RIght now I am manually finding the row milk in sheet 1 go to sheet 2, searching for the same row, finding the column and the value of the inventory, compare it and enter it. Fully manually, so you can guess it is overwhelming. But since it is a small school cafeteria i either do this way, or find a solution.

Does any of you have some input for me?

Is there a shortcut key for strikethrough?
Ctrl+S is used for Save. Ctrl+5 is used for Strikethrough. Why Ctrl+5? When you use hashmarks to count |||| is 4, strike through to mean 5.
Please supply some example data

Post a sample spreadsheet with expected results, remove any sensitive data, create a mockup example if necessary.
