Refer to Sheet title in Formula

Hello Friends,

I would like to reference the name I give worksheet in a formula.

The Situation:

I am creating a weekly review chart for a dynamic sales availability: how much of each product we are projecting available for sale in the next 18 months. The Availability is generated in a different workbook and every week I will be copying it over to this review workbook to compare to previous weeks to see what has changed in the numbers each week.

So...
I think when I copy it over, I will paste it to a new worksheet whose name will be that date.
Here's the thing - I want to then refer to the sheet names and select the ones with the latest dates to refer to in my review. Any way to make the sheet names the result of a formula?

I am thinking of a couple of ways I could do this, but they are just beyond my skill set and experience.

1. Create a function in VBA =WorksheetText(SheetNum) or something like that
2. Do something with named ranges that are updated whenever a new sheet is added.

Any thoughts?
