How can I add labels to charts in excel. I don't mean data
labels that are the values of the data points. E.G. if I have
3 columns of data, how can I graph the first two against each other,
and use the third column to label the data points.

What I think you need is an XY chart labeler. They are available for free download in many places on the net. Do a search on the web for excel xy chart labeler and take your pick.
