=Sum with a variation

Please, can anyone help me with this, my brain hurts!.
I am trying to total hours in Cols Saturday to Friday, no problem with that. But then I threw in H for holidays and S for sick etc, is it possible to have a formula that will recognise these H's and S's etc to give me a seperate total?

I have used countif to answer the query.
