How do you track your production? I need to develop a method for tracking the location of the many spreadsheets that are developed daily for different projects and I'm at a loss. What method do you use?

Add the AutoFilter icon to the Quick Access Toolbar. Select a cell containing Apple, click AutoFilter, and you will get all rows with Apple
File management - the big issue...

I use directories for each project, a subdirectory for certain files (like daily reports) that come in great number. And these are named with a yymmdd element for sorting in the correct order
